Let’s be honest, no one wants to spend their entire day prepping and cleaning in the kitchen cooking a home cooked meal that will likely get devoured in .2 seconds. Sometimes you just want a delicious meal without missing out on life. If that’s the case, well I got a solution for you! This hidden Syrian gem (I got it from my momma) known as Macaroneh Bil Laban (translation: macaroni and yogurt) is bound to make its way to your rotation of dinners.

This meal from start to finish will only take you 20 minutes top, not to mention how scrumptious it tastes. The caramelized onions, cheesy pasta, topped with a savory garlic yogurt will have you going not only for seconds but for thirds!

And for those watching their figure, I’ve got some news for you…you don’t have to worry about missing out on this Arab twist of pasta night. After trying countless low carb “pastas” I finally found my favorite and I guarantee it will be yours too. Drum roll please…introducing the one, the only…Edamame Spaghetti Pasta. Your next question may be, “Where did you get this from?”, well the answer is Costco. I’ve found that most Costco locations carry it, if not then you can easily order it off of amazon.

INSTRUCTIONS
Pasta
  1. Boil pasta per instructions. I typically use bow tie pasta but any type will do.
  2. While waiting for pasta to boil, finely chop onion and sauté in olive oil.
  3. Drain pasta once boiled. Stir pasta, chopped onion, and cheese in a pot over medium heat until cheese melts.
Sauce
  1. Stir in minced garlic and salt into yogurt. Then add yogurt sauce over the pasta (note: you may mix the sauce in or allow it to bed over the pasta)
Topping
  1. Chop parsley.
  2. Sprinkle dried mint, paprika, and parsley over pasta.
